Cucumber Raita

A good choice of accompaniment with fried rice and rotis, this is a quick side dish to make.

Grated cucumber
Mustard seeds
Cumin seeds
Green chillies
Chopped ginger
Hung curd
Chopped coriander
Juice of lime


1. Grate the cucumber and keep aside in a bowl.
2. In a vessel, heat a little oil.
3. When the oil is hot, add the mustard and cumin seeds (or either one), green chilies, ginger.
4. Pour this over the shredded cucumber and mix.
5. Empty this grated cucumber into a bowl of thick curds.
6. Add salt, coriander and lime to taste.
