Jhatpat Baingan curry
This is the quickest way to come up with good brinjal curry. This recipe was given to me by a harrowed mom, so you can imagine the lightning speed at which she must have been coooking. I love to use Panch Poran in my cooking, so incase you don't like the taste, you can stick to the usual garnish of cumin and mustard.
Method
Brinjals
Turmeric
Chilli powder
Salt
Hing
Cumin/ Mustard or Panch Poran
Ingredients
1. Dice the brinjals nicely.
2. In a pressure pan, add oil.
3. When the oil is hot, add the mustard seeds or panch puran (mix of five spices).
4. Add the brinjals and saute.
5. Add turmeric, chilli powder and salt. Mix well.
6. Pressure cook it to one whistle.
7. Garnish with corainder leaves.
