Onion-Snakegourd Fritters (Bhajjis)

A quick fix solution to handle unannounced guests is my favourite onion-snakegourd bhajjis. This deep fried snack goes well with a steaming cup of hot south Indian filter coffee or even masala chai. Most fritters are thoroughly enjoyed on a rainy day when the weather is cold and your body craves for a hot beverage and a tasty hot snack.

Ingredients
Onions
Tender snakegourd
Besan or Chick pea powder 3 tbsps
Rice powder 1 tbsp
Coriander powder 1/2 tsp

Cumin powder 1/2 tspAsfoetida 1/2 tsp
Chilli powder 1/2 tsp
Garam masala 1/2 tsp
Salt to taste
Oil for frying

Method
1. In a wide bottomed vessel, add besan and rice powder with the spices. 
2. Heat oil to a boiling temperature and pour a tablespoon into the batter mix.
3. Add water as required to make a thick batter.
4. Cut the onions and snakegourd in the shape of rings.
5. Heat oil in a vessel. 
Note: Ensure that there is enough oil for frying or the fritters will stick to the bottom of the pan.
6. To check the temperature of the oil, drop a small piece of the batter into the frying pan. If the batter rises to the top, then the oil is has reached the right temperature.
7. Dip the onion and snakegourd rings in the batter and deep fry.
8. Drain the oil in tissue papers placed on the vessel.
9. Serve hot with a spicy dip. 

Hint: Alternatively, you can also use potato, brinjal, or cucumber slices. When you buy snakegourd, ensure it is tender. Otherwise, you have to scoop out the seeds.
