Orange peel Vattha Kuzhambu

This is one of my mom's specialities! I used to hate it though, but I gradually developed a taste for it. Orange peel is excellent for the system, hence recommended.


Ingredients
Orange peel cut into small pieces 1/4 cup
Tamarind pulp (medium)
Asafoetida 1 tsp
Sambar powder 1 tbsp
Salt to taste
Powdered jaggery 1 tsp
Oil 2tbs
Mustard seeds 1 tsp
Red chillies 2 or 3 pieces
Fenugreek/ Methi 1/4 tsp
Curry leaves

Method
1. Heat 2 tbsp of oil in a heavy bottomed wok.
2. Add asafoetida and splutter mustard seeds.
3. Then add fenugreek seeds, red chillies and curry leaves.
4. Add the orange peel and saute for a minute or two.
5. Now add the tamarind extract and sambhar powder.
6. Boil well until you lose the raw smell of the the tamarind and the quantity reduces.
7. Add jaggery and boil further for a few seconds.
8. Remove from fire.


To thicken the 'kozhambu', add 1/2-1tsp of rice flour diluted in water.
