Phirni

Navaratri is the best time to cash in on all the rare sweets and savouries, like this Kashmiri dish, Phirni. While Basmati is recommened, any variety of rice will do.
Warning: It is intoxicating and guaranteed to transport you to a different plane. It will take you a sometime to recover.

Ingredients

Rice (Basmati gives extra taste) 1 tbs
Milk 500ml
Serves 4

Proportion
500 ml of milk for 1 tbsp of rice

Method

Soak rice in water for 2 hours. Pour enough water to just cover the rice.
Drain water and grind the rice into a paste.
You can use a little water for grinding.
Bring milk to boil or use pre-boiled milk.
Add the rice paste to milk.
Stir milk constantly on medium flame, until it becomes thick. Don't stop stirring, otherwise it'll form lumps.
Once the milk becomes thick, add the desired amount of sugar.
Garnish with a pinch of powdered cardamom, cashewnuts and raisins.
Serve chilled.
