Kosumalli
Kosumalli is a fresh salad served in South Indian marriages and also made at home on auspicious occasions. The preparation takes just under 5 minutes and also makes for a healthy snack at home. The traditional recipe does not include peanuts, but I quite like the crunchiness and the flavour of the peanuts. I made this recipe a long time back, blogged it without its visuals. This time around, you can see the difference!
Ingredients
Yellow moong dal
Finely grated unripe mango
Finely grated carrot
Hing (Asafoetida)
Salt
Lemon juice
Finely chopped coriander
Green chillies
Mustard seeds
Toasted peanuts
Boiled peanuts
Oil
Method
1. Soak the yellow moong dal for an hour or two.
2. Drain the water.
3. In a bowl, add the moong dal, grated carrot, boiled peanuts and mango.
4. Mix well.
5. Add hing, salt, green chillies and lemon juice.
6. Mix well.
7. Heat oil and splutter mustard seeds.
8.Garnish with chopped coriander and toasted peanuts.
