Macaroni, the Indian way!

This used to be a favourite recipe during my college days. My colleague at work cooked macroni for lunch. I am not sure how it tastes, but it sure did revive sweet memories of the macaoni I so loved once, cooked with all the spices. My personal favourite is the shell shaped macaroni. So here it is!

Ingredients

Macroni
Diced onions (keep it chunky)
Diced capsicum
Diced tomatoes
A cup of green chillies
Finely chopped ginger and garlic
Ginger-garlic paste
Cumin
Cream (1 tbsp)
Chilli powder
Asafoetida
Turmeric
Salt
Finely chopped parsely or coriander
Olive oil/gingely oil/cooking oil

Method

1. Cook the macaroni in boiling water. Add a pinch of turmeric and oil in the water.
2. Once it is cooked well, drain and run it under cold water.
3. Allow it to drain. Keep aside.

4. In a wok, heat oil and splutter cumin, green chillies, chopped ginger-garlic and saute.
5. Add the onions and saute.
6. Add the ginger-garlic paste and mix well.
7. Add the capscium (bell pepper) and saute.
8. Add the tomatoes and saute.
9. Add the spices (except the salt) and mix well, so that it blends with the vegetables.
10. Add the cream and stir.
11. Now add the macaroni and stir a couple of times.
12. Add salt and mix well.
13. Garnish with chopped coriander and serve.
You may also garnish with cheese if you like.
