Bitter Sweet Pachchadi

The pachchadi is consumed before the main feast. It is symbolic of life’s ups and downs and encourages people to accept the rough with the smooth.

Neem flowers (1 cup)
Jaggery (a small chunk)
Ghee 2 tbsps)

1. Dissolve the jaggery in a little water and allow it to boil for a minute or two until it thickens.
2. Remove from fire.
3. Add the neem flowers and the ghee.
4. Hand-crush the mixture and serve a bite, before the main meal.
