Baked veggies in white sauce

Ingredients
Diced Potatoes
Diced Onions
Diced Cauliflower
Diced Carrots
Green chillies
Salt
Fresh ground pepper
Grated cheese
Ginger-garlic paste
Chopped coriander
Oil



White sauce
Milk
Butter
Self-raising flour

Method

To make the sauce
Heat butter in a pan and when it melts, add milk.
Add the flour and allow the mixture to thicken.
Make sure the paste is smooth and devoid of lumps.

Baked vegetables in white sauce
Boil and dice the potatoes, cauliflower and carrots.
Heat oil in a wok, add onions and allow them to caramelize.
Add the vegetables one by one and saute.
Add ginger-garlic paste and mix well.
Season with salt and pepper.
Sprinkle a little cheese and let it melt.
Cover with lid over low flame.
Prepare the white sauce.
Uncover the lid and pour the white sauce over the veggies.
Simmer and let the veggies and the sauce cook well.
Sprinkle coriander leaves.
Meanwhile, pre-heat the oven and grease the tray with butter.
Pour the cooked veggies into the tray and sprinkle a generous quantity of cheese.
Set it in the oven for 20 min or until the cheese melts and turns a golden brown.
You can grate fresh ground pepper for the extra punch.
P.S: You can also use boiled spinach, broccoli, mushrooms for an alternative combination.

hotel zuari, Vasco-da-gama, goa, late eighties. the best baked vegetable (veg au gratin) was comsumed with glee for a couple of years. this is the best dish ever ever ever that was invented.
