Beetroot-Peanut Salad

Grated beetroot (2 cups)
Grated carrot (1 cup)
Boiled peanuts (1 cup)
Chopped green chillies
Chopped coriander/Parsley
Ginger julienne
Salt to taste
Lime juice (3 tbsps)

Toss the veggies with the boiled peanuts in a bowl. Add the chillies, ginger pieces and salt to taste. Toss once.
Add lime juice and mix once again.
Garnish with coriander leaves.
Serve chilled.
