Cabbage Lentil Gravy

Very simple and easy to make, the Cabbage-Lentil dish my pick of the week. The dish should be consumed hot or warm, either with bread or rice. If you just love veggies and lentils like I do, you can savor the dish sans the main accompaniments.

Ingredients
Finely chopped cabbage 1 cup
Cooked lentil 1cup
Slit green chillies 2 pcs
Curry leaves
Chopped coriander/parsley
Juice of lime (optional)
Turmeric 1/2 tsp
Sambhar mix (available in Indian stores: ½-1 tsp)
Asafoetida (a pinch)
Mustard seeds 1 tsp
Salt to taste
Cooking oil 2 tsp

Method
1. Blanch or cook the cabbage to suit your taste. Cook the lentils separately.
2. Heat oil in a pan and splutter mustard seeds, green chillies, and curry leaves. Saute.
3. Add a pinch of asafoetida to this seasoning.
4. Add the cooked cabbage and lentil to the seasoning.
5. Add turmeric and sambhar mix.
6. Stir well.
7. Let the mixture boil until the turmeric and sambhar lose their raw smell.
8. Add salt to taste.
9. Squeeze the juice of lime and mix well.
10. Garnish with coriander/parsley.

Hint
a. To thicken the cabbage-lentil dish, dissolve 1 tsp of white flour/corn flour in ¼ glass of water. Ensure that there are no lumps.
b. Pour into the dish and allow it to thicken, till the dish reaches the desired consistency.
