Broccoli Soup

Broccoli, one of my favourite vegetables, ranks high in vitamins A, K, and C. It is widely prescribed for its anti-cancerous properties and is also believed to prevent heart diseases. It has an amazing flavour and can be cooked, or steamed, or stir-fried. This recipe is a contribution from my sis-in-law who is an amazing cook herself. I made the soup this evening for my friend and it turned out just great!

Ingredients
Garlic
Onion
Broccoli
Finely chopped capsicum
Sweet corn
Butter
Salt and Pepper to taste
Milk 2tbsp
Corn flour 1 tbsp
Almonds/Cashews (fried)
Olive Oil

Method
1. Finely chop the onion, garlic, capsicum, and broccoli.

2. Saute in butter until they soften.
3. Add oilive oil and cook for a few minutes.
4. Cool the mixture and blend it.

4. In a saucepan, add little butter, the mixture, and some boiled corn (sweet corn preferably).
6. To this add water and bring to a boil.
7. Mix cornflour and water. Ensure that there are no lumps and then add to the soup to thicken it. Keep stirring over slow fire.
8. Before you remove the soup from the fire, add a little milk.
9. Season with salt and freshly ground pepper.
10. Garnish with roasted and diced almonds/cashews (optional)

Voila, your soup is ready to go. Serve hot with some garlic bread rolls.
