Stuffed Capsicum/Bell Pepper

Been wanting to try this recipe for a helluva time now. To cheer myself up, I decided to try something new - I had been unwell over the weekend, and cooking beats retail therapy some days!

Ingredients
4 medium sized capsicums
2 boiled potatoes
1 cup finely chopped onion
1 cup grated paneer (cottage cheese)
1 cup finely chopped coriander
Jeera/coriander powder
Finely chopped ginger juliennes
Juice of one lemon
Chilli powder
Salt to taste
Grated cheddar cheese (optional)


Method
1. Boil the capsicums in water for a few minutes. Take care not to make them too tender.
2. Cut the stem and top and scoop the insides of the capsicum.
3. For the stuffing, in a bowl, mash the potatoes and add the onions and rest of the ingredients.
4. Take the bell pepper, and fill it with the stuffing. Not too much to the top if you plan to finish it with a cheesey top.
5. Grease a baking tray and place the bell peppers in a pre-heated oven of 350c.
6. Bake for 15 mins and serve.

hey this looks real good. i like to prepare this with as many veggies and i can.. but i agree pepper is one of the best

soums, jst a small doubt.. if i dont hve a grill oven can i put it in the microwave or will it make it hard?

Thanks Raaga. Loved yours and inspired by the cake u baked me in a jiffy. Im cleaning up my blog. Had been using representative images since I dint have a good camera loaded n ready to go then :)
