Rava Upma
Another quick dinner treat is the rava upma. You can create this tiffin under 30 minutes. I decided to add more vegetables for nutrition and a colorful spring look and trimmed the portion of rava.
Ingredients
Rava 1.5 cups
Finely chopped mixed vegetables 2 cups
Finely chopped mixed vegetables 2 cups
Clarified butter 1 tbsp
Finely chopped ginger
Finely chopped chillies
Mustard seeds
Hing
Juice of lime
Cooking oil
Finely chopped coriander
Water
Salt
Method
1. Roast the rava for a few minutes on low flame and set aside.
2. In a wok, heat oil and splutter mustard seeds, ginger and chillies.
3. Fry the onions.
4. Add the chopped mixed vegetables and saute.
5. Add hing.
6. Add enough water for the quantity of upma to be absorbed. First add the vegetables and let it cook.
7. When the water boils really well, add salt.
8. Add the rava. Cover with lid until the rava is absorbed and cooked.
9. Mix the rava on low flame and add clarified butter.
10. Remove from fire and add juice of lime.
11. Garnish with coriander leaves.
Serve hot.
