Vegetable Fried Rice

I was inspired to make a fabulous version of the vegetable fried rice in the rice cooker. You can make this main course under 30 minutes and wow your house guests over lunch or dinner. In my case, my room mate, Sridevi was floored.

Rice 1 cup
Chopped onions 1 cup
Finely chopped green chillies, ginger and garlic
Chopped carrot 1 cup
Brocolli 1 cup
Mustard seeds
Garam masala 2 tsps
Turmeric 1 tsp
Chilli powder 2tsps
Salt to taste
Juice of lime 1 tbsp
Clarified butter 1 tbsp
Cooking oil

1. In a rice cooker, to one cup of rice, add 2.5 cups of water.
2. Add cumin, a little ginger, garlic, onion and the rest of the vegetables.
3. Allow the rice to cook with the vegetables.
4. In a wok, add a little oil and splutter mustard seeds, ginger, garlic, hing and the spices including the salt. Let the spices fry for a few minutes.
5. Add the cooked vegetable rice to the wok and toss well.
6. Add clarified ghee and mix the rice again.
7. Switch off the gas and garnish with juice of lime.

Serve hot with microwaved poppadams and raita.
Note: Garam masala is spicy, so use it in moderation.
