Spicy Mixed Vegetable Rice
After a week of hectic cleaning and settling in to our new apartment, my room mate was too exhausted to fix her dinner and requested me to make any quick spicy meal for the evening. She was also saying that for some reason , she was unable to use the cooker to make rice and dal. Ofcourse, I stepped in and resolved this issue forever.
Ingredients
Cubed carrots
Onions julienne
Cubed potatoes
Green beans julienne
Green chillies julienne
Cumin
Garam masala 3 tsps
Salt
Cooking oil
Butter 1 tbspp
Rice 1 cup
Water 1 1/2 cups
Method
1. Wash the rice well and let it soak in water for 15 minutes.
2. Pressure cook the rice with a portion of the vegetables for 3 whistles.
3. In a pan, heat oil and splutter cumin, ginger garlic paste and green chillies.
4. Add the vegetables, garam masala and salt. Fry well.
5. Add the cooked rice and vegetables and toss well.
6. Add butter and mix once more.
Serve hot with raita or spiced hung curd.
