Moong Potato Curry
I made a quick moong potato curry as an accompaniment for the rotis.
Ingredients
Moong dal 1 1/2 cup
Cubed potatoes 1 cup
Cooking oil/Olive oil
Ginger garlic paste
Red chillies
Cumin and mustard seeds 2 tsp
Turmeric 1 tsp
Chilli powder 2 tsp
Sugar 1 tsp
Salt to taste
Coriander
Juice of lime
Method
1. Soak the moong for an hour or two and pressure cook it to one whistle.
Note: Depending on the texture you like, you can cook it more. I like it a little crunchy rather than mushy.
2. Similarly you can pressure cook the potatoes and set aside.
3. Heat oil on a tava and splutter mustard/cumin seeds, including the chillies and ginger-garlic paste.
4. Add the moong and the potatoes and saute.
5. Add the turmeric, chilli powder and salt and mix well.
6. Add sugar and saute.
Garnish with juice of lime and coriander before serving.
