Stir Fry Veggies with Fried Tofu and Peanuts

I was craving for broccoli for the last couple of days and wanted to make the veg stir fry since it was the key ingredient. You are free to choose your English veggies however. The stir fry was an excellent dinner option. Creatively, I also used it for my breakfast today, served over kraft cheese in an open sandwich.

Brocolli florets 2 cups
Carrots 1 cup
Cubed potato 1/2 cup
Firm Tofu Cubed 1 or 2 cups
Salted peanuts 1/2 cup
Corn powder 2 tsps
Sesame or cooking oil
Chilli paste (Sambal Olek)
Soy Sauce
Ginger julienne 1 tbsp
Minced garlic 1 tbsp

1. In a pan, heat oil and add the ginger and garlic. Saute until they give out the flavours.
2. Fry the tofu cubes and set aside.
3. Add a little oil and include the vegetables. Toss once and keep cooking on high flame.
4. Add the chilli paste and mix well.
5. Add soy sauce and toss.
6. Add salt to taste. 
7. Add a little water  and cook on high flame till the veggies cook, but dont become soggy.
8. Make a mixture of corn flour and water and pour into the veggie stir fry pan. Ensure that there are no lumps.
9. Keep stirring until the raw taste disappears and the slurry makes a delicious gravy.
10. Add the fried tofu. Garnish with toasted peanuts and serve hot with rice.
