Tasty Arugula Salad

I fell in love with arugula after watching a host of culinary television shows, following which, I had a heap of Arugula Salad for dinner at Spasso. I had been to Spasso last night for Ted's dad's 70th and downed a few glasses of wine and some brilliant  linguine pasta made with black olives, olive oil and tomato base. I decided to balance my lunch today with a tangy, crunchy, arugula salad. 

Ingredients
Fresh young arugula 2 cups
Finely chopped cherry tomatoes 1/2 cup
Finely chopped cucumber 1/2 cup
Chopped green or black olives 1/4 cup
Olive oil 2 tsps
Salt
Pepper
Juice of lime 1 tsp
Grated mild cheddar cheese

Method
1. Wash the arugula under cold water and set aside.
2. In a salad bowl, toss the rest of the ingredients and add the arugula to it.
3. Season with olive oil.
4. Add salt, pepper and juice of lime topped with cheese just before serving.

The blog title says it all. Cant argue when the title starts with 'Tasty'. Looks yum by the way! So how many minutes did you take to gobble it all?
