Aloo Poha

Inspired by the Sabudhana kichdi, (which my mom wanted to make, but ended up making doasas), I decided to surprise her with a lovely spicy Aloo Poha, which is flattened rice cooked with potatoes and spices. What more can you ask for to make your Saturday morning memorable?

Ingredients
Flattened rice 2 cups
Boiled and chopped potatoes 1 1/2 cups
Chopped red onions 1 cup
Chopped ginger 1 tsp
Curry leaves, a few sprigs
Mustard and Cumin 1 tsp each
Dry red chillies 2 pcs
Asafoetida 2 tsp
Turmeric 2 tsp
Chilli powder 2 tsp
Mom's Magic Curry powder 1-2 tbsp
Roasted peanuts 1/2 cup
Salt to taste
Juice of lime 1-2 tbsp
Sugar 1 tsp
Chopped coriander 1/2 cup
Ghee 1 tbsp (optional)
Gingely oil 1 tbsp

Method
1. Wash the flattened rice thoroughly and soak it in just enough warm water to soften the rice.
2. In a wok, heat gingely oil and splutter mustard, cumin, curry leaves, hing, ginger and dry red chillies.
3. Add the onions and let it brown and then add the potatoes. Saute.
4. Add turmeric, chilli power, curry powder, salt including the peanuts. Saute well.
5. Add the flattened rice slowly and mix well with the spices.
6. Add sugar and saute.
7. Allow the poha to cook for 10 minutes. Check for the spice well and adjust accordingly.
8. Take the wok off the stove and drizzle juice of lime. Mix well.
9. Add a spoon of ghee for taste.

Garnish with chopped coriander and serve hot.
