Sprouts with Baby Spinach Summer Salad

My mom taught me this easy-to-make healthy, crunchy summer salad using home grown baby spinach and fully-germinated sprouts. With the summer turning the heat on, this chilled crunchy salad is a refreshing alternative.

Ingredients
Sprouts 1 cup
Chopped baby spinach 1/2 cup
Julienne of red and yellow bell peppers 1 cup
Chopped walnuts 1 tbsp
Dried cranberries 1 tbsp
Salt to taste
Fresh ground pepper 1 tsp
Olive oil 2 tbsp
Juice of lime 1 tbsp
Chopped coriander/mint
Grated Parmesan 2 tbsp

Method
1. Make a dressing using olive oil, pepper and juice of lime. Whisk so that the ingredients blend.
2. In a salad bowl, add all the vegetables and nuts.
3. Toss the salad with the dressing.
4. Before serving, add salt.
5. Garnish with grated cheese and chopped mint or coriander.
