Coriander Pesto

This is my version of a pesto, which does not include garlic and parmesan cheese. I decided to go for a slightly different palate. It was not too bad after all. Infact, it was quite good as a spread for the homely vada paav.

Fresh finely chopped coriander, a handful
Finely chopped onions 1 tbsp
Finely chopped green chillies 1 tsp
Flax seeds  1 tbsp
Coarse grounded black pepper
Dash of lime
Olive oil 3 tbps

1. In a wok, warm olive oil and add finely chopped onions, green chillies, flax seeds and a handful of coriander.
2. Add salt, asafoetida and juice of lime.
3. In a blender, add these ingredients along with crumbled feta cheese.
4. Blend it to a smooth consistency.

Use it as a spread or as a dip.
