Steamed Peanuts with Raw Mango and Carrot Salad

A brilliant salad that I learnt from my mom, steamed peanuts are great for an evening snack or as an accompaniment with evening drinks. You can play with simple mild spices and vegetables to enhance the peanut's flavour.

Ingredients
Steamed peanuts 2 cups
Finely chopped raw mango 2 tbps
Grated carrot 2 tbsp
Finely chopped green chillies 1-2 pcs
Mustard seeds 1 tsp
Finely chopped coriander, as required
Salt
Pepper
Juice of lime
Cooking oil 1 tsp

Method
1. In a bowl, add the peanuts, raw mango and grated carrots. Toss well.
2. Add finely chopped coriander.
3. In a wok, splutter mustard seeds and green chillies. Garnish with salad.
4. Add salt, pepper and juice of lime. Toss well.

Serve warm.
