Tangy Sweet Carrot-Orange Salad

For Sunday night Valentine's special, I made a lovely warm broccoli soup, a chilled tangy sweet Carrot-Orange Salad and Veg Wheat Quesadillas. I modified the salad recipe from Chef Kunal Kapoor's show to suit my taste and infuse my creativity to the dish.

Grated Ooty carrots (orange) 2 cup
Grated Delhi carrots (red) 1 cups
Pomegrante deseeded 1/2 cup
Juicy oranges peeled and deseeded 1 cup
Chopped walnuts 1/2 cup
Roasted peanuts 1/2 cup
Chopped coriander
Juice of lime
Olive oil

1. Toss the ingredients in a bowl. Refrigerate it.
2. Make the dressing by whisking olive oil, salt, pepper and juice of lime.
3. Before serving, add the dressing, toss once and serve.
