Carrot-Beetroot Soup
An earthy, rich Carrot-Beetroot soup served alongside a crispy strip of Roti is just what you need after a long work week.
INGREDIENTS
Steamed 🥕 Carrot 1-2 medium size
Steamed beetroot 1 medium size
Boiled tomato 1 medium size
Ginger-garlic
Peppercorns
Unsalted butter 1-2 tsp
Salt to taste
METHOD
1. Pressure cook or steam the vegetables together to save time along with garlic and peppercorns.
2. Puree it.
3. In a wok, melt butter.
4. Add ginger and then the rest of the puree. Let it cook till it bubbles.
5. Add salt to taste.
6. Serve with fresh cream and coriander for a hint of colour and beauty.
