AMLA RASAM (GOOSEBERRY THIN SOUP)
Gooseberry or Amla is world famous for its rich store of Vitamin C. You can make Chutney, Rasam, and Pickles using this powerhouse ingredient.
Today, I made the Gooseberry rasam, which can be enjoyed as a thin soup or mixed with rice and ghee.
INGREDIENTS
Gooseberries, 1 cup
Ginger, finely crushed
Tomato, chopped, 1 cup
Tuvar dal, cooked 1 cup
Turmeric 1 tsp
Cumin 1 tsp
Mustard seeds 1 tsp
Green chilli, 1/2 chopped
Curry leaves
Ghee 1 tbsp
Coriander leaves
Salt to taste
FOR ROASTING AND DRY GRIND
Cumin 1 tbsp
Peppecorns 2 tsps
Dry red chili 2 pcs
Asafoetida, small rock
Coriander seeds
Curry leaves
HOW-TO
1. Grind the gooseberries with ginger to a fine paste.
2. Transfer to a vessel on low flame. Add water to dilute for consistency.
3. Add the cooked tuvar dal.
4. Add chopped tomatoes.
5. Add turmeric and the roasted, ground Rasam powder. Add salt for taste.
6. After the first boil, switch off the stove.
7. In a small wok, heat ghee. Splutter mustard, cumin, curry leaves, green 🌶️ and asafoetida.
8. Pour over the Gooseberry rasam.
Garnish with chopped coriander and serve.
