Dhaliya
Dhaliya or Samba Rava or Broken Wheat is highly recommended in our everyday diet, especially for diabetics. It is considered a better substitute for rice due to its low sugar content. It cooks fast and tastes awesome with simple ingredients.
You can either pressure cook (1:2 ratio, that is dhaliya:water) or boil it in water, just like upma. Get the fat grained ones when you shop.

Cooked samba rava(2 cups)
Finely chopped carrots
Finely chopped brocolli
Finely chopped onions
Shelled peas
Roasted peanuts
Mustard seeds 1 tsp
Bengal gram 1/2tsp
Ginger juliennes 1/2 tsp
Asafoetida
Cooking oil
Curry leaves
Coriander leaves finely chopped
Lime juice
Green and dried red chillies
Salt to taste
Method
1. Boil the vegetables and set aside.
2. In a wok, heat oil and splutter mustard seeds, bengal gram, chillies, ginger juliennes, asafoetida, and curry leaves.
3. Add the vegetables, peanuts, and saute.
4. Add the cooked dhaliya and mix well with the veggies.
5.Add salt to taste and allow the dhaliya to cook well for a few minutes.
6. Allow it to cool.
7. Garnish with lime juice and coriander leaves.
