Thai Style Noodles

Inspired by Phad-Thai noodles, I made this aromatic piece of work using a different assortment of ingredients for a Sunday lunch.

Ingredients
Noodles 2 packets
Chilli oil
Japanese sesame oil
Dark soy sauce
Ground honey roasted peanuts
Salt
Pepper
Long slit onions, capsicums and tomatoes
Finely chopped spring onions
Ginger-garlic paste
Finely chopped fresh ginger and garlic
Cumin seeds
Asafoetida/Hing
Wedge of lime

Method
1. Boil the noodles with a little salt and oil.
2. Drain and wash under cold water and let it dry.
3. In a wok, heat sesame oil on low flame and fry the spring onions, ginger-garlic pieces including the ginger-garlic paste.
4. Add the onions and roast until it turns pink.
5. Add the capsicums and cook for a few minutes.
6. Add the tomatoes and toss well.
7. Add the chilli oil, soya sauce, salt and pepper.
8. Add the noodles and toss well.
9. Add the ground honey roasted peanuts and toss again.
10. Serve hot with extra ground peanuts and wedge of lime.
