Easy Palak Paneer

I am not the one to go through an elaborate cooking process in the kitchen, unless it impacts the dish. For my homestyle palak (spinach) paneer (cottage cheese), I used minimal ingredients to bring out the maximum flavour.

INGREDIENTS 

Sautéed palak, a bunch

Paneer cubes (homestyle or bought):1 pack

Unsalted butter  1 tbsp

Onions 🧅 1/2 cup

Garlic 🧄 2-3 pcs

Cumin seeds 1-2 tsp

Kasuri methi, 1 tbsp

Ginger julienne

Sichuan Meghalaya pepper 1 tsp

Turmeric, a pinch

Asafoetida, a pinch

Salt to taste

METHOD

1. Wash the greens thoroughly to get rid of any mud.

2. In a wok, add unsalted butter.

3. When it melts, add cumin, asafoetida, ginger, garlic and onions. Let it caramelise on low flame.

4. Add the spinach and sauté till it shrinks and reduces to half the size.

5. Transfer the contents to a mixie jar. Allow it to cool before pureeing it.

6. Take the same wok, add a teaspoon of oil and cook the puree. Add the paneer cubes.

7. Add Sichuan powder, pepper powder, kasuri methi and salt. Sauté on low flame.

8. Once it bubbles, take it off the stove. Optionally, garnish with juice if like and 🌿 fresh coriander.
